Introduction

This is a great side dish to serve instead of potatoes or rice. It has just enough kick to keep it really tasty. This is a great side dish to serve instead of potatoes or rice. It has just enough kick to keep it really tasty.

Ingredients

    12 oz Fat free sour cream
    3/4 cup egg substitute
    10 oz pkg frozen corn kernels
    1 medium zucchini shredded
    1 small can chopped green chilis
    2 slices lite bread (processed into crumbs)
    1/2 cup shredded monterey jack cheese
    1 teaspoon garlic powder
    salt and pepper to taste
    1/2 cup shredded cheddar cheese (set aside)

Directions

Mix all ingredients except cheddar cheese until well blended. Pour into a baking dish that has been coated with nonstick cooking spray. Back for 20 minutes. Remove from oven and sprinkle with cheddar cheese. Back for another 10 minutes.

Bake at 350 degrees. Serving size 3/4 cup
