Introduction

This has been a family favorite since I was a kid and both of my daughters enjoy it with their families too. I usually make this with 1 cup of oil and 1 cup of lemon juice. In order to lower the fat and calories I have reduced the oil and increased the lemon juice in this recipe. You can adjust to your taste. Ingredients

    16 oz pkg Steakhouse Taboli Wheat
    2 bunches chopped green onions
    1 cucumber chopped
    5 c parsley chopped ( 2-3 bunches)
    3 c diced tomato
    1 bell pepper chopped
    1 tsp salt or salt substitute
    1/2 c canola oil
    1 1/2 c lemon juice

Directions

Rinse and drain taboli wheat and place in a large bowl. Add oil and lemon juice and set aside. Chop all the vegetables and add to the bowl. Add salt and mix well. Cover and refrigerate at least 3 hours or overnight. Stir occasionaly to blend flavors. Keeps well in refrigerator for a least a week.
Serving size 3/4 cup.
