Thyme, fresh, 6 tsp (remove)
Capers, canned, 1 tbsp, drained (remove)
Olive Oil, 0.24 cup (remove)
Lemon Juice, 1 lemon yields (remove)
Garlic, 2 cloves (remove)
Parsley, 2 tbsp (remove)
Red Ripe Tomatoes, 1 large whole (3" dia) (remove)
Mancini Sweet Roasted Peppers, 8 oz (remove)
Chick Peas, 3.5 cup (remove)
Red Wine Vinegar, 1 tbsp (remove)
Directions
In a small mixing bowl stir together red wine vinegar, lemon juice, garlic, crushed red pepper, capers, ground cumin, and paprika. Slowly whisk in olive oil and set aside.
Toss chick peas and next 4 ingredients in a large mixing bowl, and drizzle with vinaigrette. Add sea salt and pepper to taste. Add feta cheese and toss gently. Serve immediately at room temperature or chill until ready to serve. Serve over a bed of fresh spinach for a nice entree salad.
Yields approx. 4-1 cup servings
