Ingredients

    2 cups of grated carrots
    3 tbsp (1.5 oz) of chopped walnuts
    3 tbsp (1.5 oz) of raisins
    2 celery stalks (including leaves) chopped fine
    1 apple (about 1 cup) cored and diced
    .25 cup fresh pineapple diced (or canned packed in juice in a pinch)
    3 tbsp of Grapeseed Oil Vegenaise (egg & dairy free mayo)

Directions

Place all ingredients in a bowl and stir until well mixed. Makes about 4 servings.
