Ingredients

3 Tbsp Olive oil (opt. Butter)
1&1/2 lbs.(24 oz.) boneless, skinless chix breast, cubed
1 c. onion, chopped
1 c. carrot, chopped
1 c. mushroom halves
1 c. celery, diced
1/2 c. walnuts, chopped
1/2 tsp salt
2 Tbsp curry powder
1/2 tsp Cayenne pepper
1&1/2 c. cooked garbanzo beans (15 oz. can)
1&1/2 c. tomato sauce
1 mini box of raisins
1/2 cup Sun maid dried prunes, halved
1c. water
1/2 c. white wine (optional)
Directions
In a large saucepan saute in olive oil (or butter) the cubed chicken, onions, carrots, mushrooms, celery, walnuts. Stir in the salt, curry powder, and cayenne pepper.
Bring to a simmer, then add garbanzo beans, tomato sauce, raisins, dried prunes, water, and wine.
Cover and bring to a boil. Simmer on med heat for 40 minutes.
Best when served with Couscous.
