Ingredients
-
1-cup sliced fresh strawberrys
1-bag of fresh baby spinich
1/4- cup of slivered Almonds
1/4-cup of crushed pecans
1/3-cup of cranraisins
1/3-cup of crumbled feta cheese
2-tbsp. of fat free honey Dijon salad dressing (optional)
1- cup of crumbled smoke Salmon (optional)
Directions
Open bag of fresh baby spinich and pour into large bowl set aside. Next rinse and slice 1 cup or more of fresh ripe strawberrys. I found a neat trick for slicing strawberrys. I cut the stems off and then I put about half of the strawberrys into a hard boiled egg slicer. Slices them quick and they are all the same thickness. Next sprinkle in about half of the almonds, pecans, cranraisins and feta cheese. Now toss the salad to mix every thing up. Top off the salad with the remaining ingredients. The reason I don't pour it all in at one time is so you won't end up with all the nuts, cheese and strawberrys on the bottom! We like this with honey mustard dressing on top 0r a rasberry vingerette. If we want a light meal we add crumbled smoke salmon. Enjoy!!!
