Introduction

Ingredients

    - 1 box plain wheat couscous (I use Near East brand)
    - 1 orange bell pepper – diced
    - 1 yellow bell pepper - diced
    - 2 stems of green onion – sliced thinly
    - 1 bag sundried tomatoes
    - 2 tsp. fresh tarragon – minced
    - 6 tbsp. Wegmans lemon vinaigrette

Directions

1. Prepare couscous to box directions. Let cool to room temperature.
2. In a large bowl, combine cooled couscous, peppers, green onions, and sundried tomatoes. Add vinaigrette and combine well.
3. Store in refrigerator. When ready to serve, splash with a small amount of dressing to freshen up the taste!
