Introduction

Penne Pasta Salad Penne Pasta Salad
Number of Servings: 14

Ingredients

Barilla Plus Penne Pasta (14.5 oz box)
2 cups chopped fresh broccoli florets
2 cups carrots chopped into bite-sized pieces
    2 cups cherry tomatoes
1/2 cup Kraft Free Italian Dressing
1/2 cup Kraft 2% Milk Sharp Cheddar Cheese

(I listed the exact brands I used so you know what I used for the recipe calculations)

Directions

cook pasta as directed. Place chopped broccoli and carrots into strainer. To drain the pasta, pour it into the strainer containing the vegetables to blanch them. Toss vegetables and pasta and place in refridgerator until chilled. Toss other ingredients with pasta mixture and serve cold.
Prep time above includes the time needed to chill before adding other ingredients.

This would be really good with tuna too if you want to add more protein.

Optional: add 1/4 cup black olives

Number of Servings: 14

I use almost the same recipe, except my family likes their veggies a little more cooked. Just throw the veggies into the water with the pasta for the last couple of minutes, then strain. Fast prep and better as left overs than the first day! - 6/30/09

Great Recipe. My daughter and I made this using the opened boxes of pasta we had left in the house (all whole grained), added bell peppers, onions and turkey pepperoni and have enough to eat for a couple of days at work. When its 100+ degrees outside we were looking for something healthy and cool. - 6/30/09

Great recipe and easily adaptable (I'm vegan, so I didn't add the cheese). And nice tip about blanching the veggies while straining the pasta--saved me a step :) - 7/6/08

I'll make a smaller portion next time, and plan to add tuna or chicken. It was great, easy, and fast. Thanks for sharing. - 7/9/08
