Ingredients

4 whole eggs
3 egg whites
1/2 cup Reduced fat Mexican Four Cheese blend
2 cup frozen vegetables, thawed
12 herb crackers, crushed
1/2 tablespoon olive oil
1/3 cup chopped red onion
5 cloves roasted garlic
Directions
Blend together the cracker crumbs and oil olive. Press into pie plate and bake for 10 minutes at 350.
Beat together eggs and egg whites. Add salt and pepper to taste.
Mix together all vegetables and place on top of crust.
Pour egg mixture on top and bake for 15 minutes at 350.
Sprinkle cheese on top and bake an additional 5 minutes or until eggs are firmly set and a knife inserted in the middle comes out clean.
Serving Size: Makes 1 10-inch pie
