Ingredients

    2 tablespoons lemon juice
    1 tablespoon extra-virgin olive oil
    2 tablespoons fresh mint, chopped
    1 tablespoon fresh chives, chopped
    ¼ cup sweetened shredded coconut (I add more to taste)
    ¼ cup dried currants (I add more to taste)
    1 pound carrots, peeled & shredded
    Salt

Directions

For dressing, whisk together the lemon juice, olive oil, mint, and chives. Season with salt.
Combine the carrots, dried currants, and coconut, tossing until mixed.
Pour the dressing mixture over the salad and toss.


Serving Size: Makes about 6-8 servings
