Introduction

This is shepherd's pie without the mutton and dairy. This is shepherd's pie without the mutton and dairy.
Number of Servings: 8

Ingredients

    1 bag of frozen green beans
    1 lb of extra lean ground beef
    1 8oz bag of part skim mozzarella cheese
    2 small cans of tomato sauce with no salt added.
    2 cups dehydrated mashed potatoes
    1.5 cups of Silk Lite Vanilla Soymilk
    1 tsbp of Smart Balance Light Buttery Spread with flax oil
    Spices to taste. I usually go for a light marinara.

Directions

Preheat oven to 350 degrees.
Thaw green beans in micrwave on defrost for 45 secs.
In med skillet, brown ground beef
In med saucepan, add tomato sauce and spices, set to boil, then lower to simmer once it is going.
In another saucepan, prepare the mashed potatoes.
In a casserole dish, combine meat, tomato sauce and green beans, mix thoroughly.
Smooth prepared mashed potatoes over the mixture.
Sprinkle with cheese.
Bake in oven for 30 mins.
