Introduction

I got this great deal on a fresh turkey breast. I took it home, deboned it and cut it into 1 inch squares. Then, I decided to start a heart vegetable soup with the stock I was making. Ingredients

    Turkey (light meat), 2 unit (yield from 1 lb ready-to-cook cut into 1 inch pieces
    Olive Oil, 1 tbsp
    Onions, raw, 1 cup, chopped
    *Hungarian Hot Wax Pepper (1 medium),chopped
    Celery, raw, 1 cup, diced
    Carrots, raw, 4 medium chopped
    Parsley, 1 cup chopped
    Water, tap, 10 cup (8 fl oz)
    *salt, Hain* sea salt, 0.25 tsp
    *Mrs Dash, 4 serving
    *Garlic powder, 3 tsp
    *Crushed Chili Pepper Flakes, 1 tsp
    *Tomatoes, red, ripe, raw, year round average, 1 large whole (3" dia) (can substitute green tomato

Directions

Cube the turkey into one inch pieces. Brown in 1 T of olive oil. over medium heat. Add celery, carrots, parsley, and onion.Add salt, Mrs. Dash, Garlic powder, Crushed Pepper Flakes and one large diced green tomato (red is ok too). Add 10 cups of tap water and cook for 2 hours on medium to medium low heat with lid on. Stir occasionally.

You may want to serve this over a bowl of cooked rice for more heartiness. I was looking for a light broth that had a hearty feel soup. Go Figure and Enjoy Yourself.
