Ingredients

3 cups of uncooked Cousous (semolina)
I cup hot Water
Juice of 5 large Lemons
3 Tbsp Olive Oil
2 large and ferm Tomatoes, seeds removed and cut in tiny cubes
2 Challots cut in tiny cubes as well
7 branches of Fresh Parsley
20 leaves of Fresh Peppermint
Salt, Pepper
Directions
This dish is to prepare the day before, for reasons mentionned earlier.
In a big salad bowl pour the Couscous, the Lemon's juice, the cup of hot Water, Salt and Pepper. Mix thouroughly with a fork to separate the grain, and chill in the fridge for 2 hours, or until the Couscous absorbs all the fluid and inflates nicely. Take it out of the fridge and mix again.
Then, add Tomatoes and Challots, Olive Oil, Parsley and Mint cut into small pieces. Mix all the ingredients together - still with a fork.
Cover the salad bowl with plastic wrap or aluminum foil and chill in the fridge overnight. Make sure to mix 3 or 4 more times with a fork before eating. The grain must be sandy-like, dry, and must not stick together.
** Serve with a green-leaf salad, and it is the perfect side dish for a BBQ or a Picnic !
