Ingredients

    8 oz whole wheat spaghetti (dry weight)
    half brick (8 oz) extra firm tofu diced
    1.5 t. sesame oil
    3 T rice vinegar
    4 T soy sauce
    2 T canola oil
    3 cups shredded cabbage
    1 large shredded carrot
    1 red pepper julienned
    6 stalks of green onion
    3 T chopped cashews (peanuts would also work)
    2 T toasted sesame seeds

Directions

Cook and drain spaghetti. Stir together sesame oil, rice vinegar, soy sauce, and canola oil in a large bowl. Then add remaining ingredients, toss, and serve.

Serving Size: Makes 4 appr. 2-cup Servings
