Ingredients

    Safeway 15-Bean Soup Mix (dry), 2.5 cup
    Ham, regular (11% fat), 2 cup, diced
    Green Chile Sauce, 6 oz
    Onions, raw, 1 cup, chopped
    Celery, raw, 1 cup, diced
    Carrots, raw, 1 cup, chopped
    Garlic, 4 cloves
    Lea & Perrins, Worcestershire Sauce, 3 TBS
    2 tsp dried basil
    1/2 tsp marjoram
    3/4 tsp dried chile pepper
    Tomato Sauce, 1.75 cup
    Barley, pearled, raw, .75 cup
    Ancient Harvest Traditional Whole Grain Quinoa, 0.75 cup

Tips

Beans can be soaked overnight before cooking for 2 1/2 to 3 hours.


Directions

Rinse dry beans and place in a Dutch oven with 3 qts. of water. Bring to a boil; boil for 3-5 minutes. Remove from the heat; cover and let stand for 1 hour. Drain and rinse beans. Return to pan; add 3 quarts water and the next 11 ingredients (all but barley and quinoa). Bring to a boil. Reduce heat; cover and simmer for 2-1/2 to 3 hours or until beans are almost tender. Add barley and quinoa; bring to a boil. Add more water or chicken broth if needed. Also check if it needs salt and pepper. Reduce heat; cover and simmer for 30 minutes. This always improves with time so the second and third day it is even better.
