Introduction

Number of Servings: 6

Ingredients

    1 Tbsp Olive or Canola Oil
    1 Med Onion (chopped)
    2 Cloves Garlic (crushed)
    1 to 2 Jalapeno Chilis seeded and finely chopped (if desired)
    2 cans (about 4 cups) Black Beans
    1 can Fire Roasted Tomatoes (undrained)
    4 to 6 cups Vegetable Broth (low or no sodium)
    2 Tbsp ground cumin
    2 Tbsp Cilantro
    low-fat yogurt or sour cream (if desired) for garnish
    Lime wedges for taste (if desired)
    **I also add 2 cans of red kidney beans for extra fiber!

Tips

This is a great soup to make a big pot and keep. There is no meat, so it will not go bad very quickly. I use the no salt added vegetable broth. NOTE: The sodium looks very high for this recipe because I did not have the nutrition value for low or no salt broth.


Directions

Cook onion in olive or canola oil until transparent. Add all other ingredients to stock pot and then the onion when transparent. You may want to add extra cumin and/or cilantro to taste. Cook approximately 30 to 45 minutes.
