Ingredients

    24 oz Potatoes
    1/2 cup Chopped Onion
    6 TBSP Sweet Pickle Relish
    4 Boiled Eggs
    1/2 cup Fat Free Miracle Whip
    1 TBSP Mustard
    Salt and Pepper

Tips

I prefer to use red potatoes with the skins still on, but this recipe is great with any variety of potato.

If you prefer a chunkier potato salad, allow the potatoes to cool completely before mixing in the dressing mixture.


Directions

1. Wash, Cube, and Boil Potatoes. (24 oz is about 4-5 medium sized potatoes)

2. Boil Eggs.

3. While Potatoes and Eggs are boiling, combine FF Miracle Whip, Chopped Onion, Relish, and Mustard. Add Salt and Pepper as desired.

4. Dice boiled eggs and add to the Dressing mixture.

5. Mix Potatoes and Dressing mixture.

6. Chill for about 30 minutes.

Makes about 8 1/2-cup servings.
