Ingredients

two 3 oz boneless filets orange roughy
2 Tbls EACH- diced green, red, and yellow bell peppers
    3 Tbls diced onion
1/4 cup diced cherry tomato(or regular tomato)
    2 oz dry white wine
    1oz grated mozzarella cheese

Directions

Wash and pat dry two 3oz boneless filets of orange roughy fish. Line baking dish with rimmed sides with foil- don't press foil flat into corners(makes a shallow pillow to hold liquid near fish.) Place filets in center of foil and pour wine around filets. Spray top of fish with cooking spray. Dice all veggies into 1/4 dice and sprinkle evenly over fish on top of butter. Grate the mozzarella and sprinkle evenly over the veggies. Bake at 350 for 15 minutes. Fish is done when whit and flaky all the way through. Do not over cook! Makes 2 servings.

    Delicious recipe.
I only used olive oil instead of the cooking spray.
