Ingredients

    2 whole whitefish - no guts
    2 large carrots
    1 large onion
    4 large eggs
    1/2 cup Matzah meal
    1 tbsp salt
    1 tsp white pepper
    1 tbsp granulated sugar
    1 tbsp vegetable oil

Directions

NIGHT BEFORE -this all can be the same day if you have time
2 whole whitefish (preferred), bones and head removed and set aside (Remove flesh to separate bowl to use for patties)
2 carrots and 1 onion for grind (to mix with ground flesh later)
Add 1 tbsp salt, 1 tsp white pepper, and tbsp sugar (sugar can be none and salt can be to taste.)
FISH STOCK SOUP is what these patties are cooked in...another recipe
Fish Patty Prep
Grind the 2 carrots and 1 big onion, using a blender. Keep a little coarse
Grind fish flesh- little coarse
Using a blender and beginning a second grind, include 4 eggs & ½ cup Matzah meal & 1 tbsp oil...add a little water if it is to thick.
Form Patties using water to moisten hands for forming. Put mixture into the head and tail if you like. Smooth out the patties with a breadknife and water.
Cooking
Add fish patties to FISH STOCK SOUP– cold and uncooked. Boil uncovered for 1 ½ hours, then cover and simmer on low for ½ hr.
Serve COLD with a slice of carrot
You may save the fish soup and use it as soup if so desired. (Very tasty vegetables if you like fish)
