Ingredients

1.25 lbs butternut squash, peeled, seeded and cubed
1 medium yellow onion, lalved and sliced from pole to pole
4 cloves garlic, thinly sliced
1 tsp crushed rosemary
1 tsp crushed thyme
1/2 tsp paprika
1 tsp Kosher salt
1/2 tsp ground black pepper
3 TBSP Olive Oil
Tips
Total bake time could be up to an hour, depending on the size of the squash cubes.
Directions
Preheat oven to 425. Combine all ingredients except olive oil in a large bowl to distribute the spices evenly among the vegetables. Stir in olive oil and place into a 9x13 baking dish.
Cover baking dish with foil and bake for 30 minutes.
Remove foil, stir gently and bake uncovered for another 15-25 minutes or until onions get a little caramelized and the squash is very tender when poked with a knife.
