Introduction

As with most of my recipes this makes a HUGE batch. I feed 5 and like to have leftovers to either freeze or eat for lunch the next day. This recipe makes about 18 one cup servings. this recipe is very versitile, you could add or reduce the veggies as you like, even use no sodium tomato sauce(this is calculated with sodium). since the veggies are chopped up so fine, picky kids will barely notice them, so this is kid friendly also. Ingredients

    2 tbs. olive oil
    2 tsp. minced garlic
    2 stalks celery, finely chopped(I use my food chopper)
    4 carrots, finely chopped
    1 large onion, finely chopped
    29 0z tomato sauce
    14.5 oz diced tomatoes with basil and garlic
    14.5 oz zucchini with italian style tomato sauce(or fresh zucchini)
    1 lb 97% lean ground beef
    1 tsp. oregano(or to taste)
    2 tbs dry basil(or to taste)

Directions

heat oil over medium heat in dutch oven, chop up all veggies and add to hot oil. add spices, and saute until onions are translucent. Meanwhile in seperate pan brown ground beef. Add zucchini, diced tomatoes, and tomato sauce, stir well. Add ground beef, simmer over low heat(or on low in crock pot for 8 hrs) for 5-6 hrs stirring frequently so it doesnt burn to pan. Serve over Whole Wheat spaghetti noodles.
