An easy sugar-free berry syrup for pancakes or sauce for dessert. It can be made with fresh or frozen berries, in any proportions you like. Ingredients

    Ingredients:

    3 cups of frozen mixed berries
    1/2 cup water
    Artificial sweetener to taste - about 1/2 cup makes a traditionally-sweetened syrup
    pinch of salt



Tips

Each 1/4 cup serving contains about 7 grams of usable carbohydrate, 4 grams of fiber, and lots of antioxidants.


Directions

Preparation:
Put ingredients in saucepan and bring to a boil. The berries will begin to break down as soon as the boiling begins. After 5 minutes, turn off heat and mash with a potato masher or fork to help break down the larger berries. Boil for another 2 minutes to combine. Remove from heat. Mixture will thicken as it cools.

Serving Size: Yield: about 1 and 1/4 cup of sauce

    Very Good
    I added a tablespoon of cornstarch just to make sure it thickened. Served over sugar free vanilla pudding with a dollop of lite cool whip. Makes plain pudding a fancy dessert, and easy. Thanks - 1/13/20
