Introduction

Ingredients

1 tblsp olive oil
1 large yellow onion
20 oz. cubed butternut squash
1 head cauliflower
1 bunch broccoli
32 oz low sodium chicken broth
3 slices turkey bacon
fresh or dried thyme
fresh or dried parsley
salt
pepper
Optional: red pepper flakes
Tips
For just a bit of "kick", I also add red pepper flakes. You can also toss in some brussel sprouts or snap peas with the other vegetables.
Directions
Saute onion in olive oil. Add cubed butternut squash, roughly chopped cauliflower and broccoli. Add chicken broth and simmer til vegetables are tender. Take off heat and use immersion blender to puree ingredients. Add turkey bacon and fresh or dried herbs, salt and pepper. Ready to serve.
