Introduction

This is a delicious cold bean salad with healthy Edamame beans ( soy ) and green beans. If you like the taste of a sweet and sour cucumber salad you will like this. You can add onions chopped if you like. The peppers I added were pre chopped at the grocery store and were a mix of red, yellow and green. Ingredients

    *Edamame, 0.5 cup
    Olive Oil, 1 1tsp
    *Balsamic Vinegar, 2 tbsp
    1/2 packet Splenda (.5 tsp )
    Green Beans (snap) cooked and cooled, 1 cup
    Salt, 2 dash
    *Peppers, sweet, red, fresh, 1 tbsp
    Green Peppers (bell peppers), 2 tbsp
    Pepper, black, 1 dash

Tips

I used green beans that I had steamed in the packet the evening before for dinner. I had a cup left over in the fridge so I used them for this recipe. You can use canned green beans if you want to. This recipe is perfect for brunch, dinner, lunch, picnic.


Directions

Combine all ingredients and toss. Enjoy cold.

Serving Size: Makes 1 large serving
