Introduction

Low fat, very veggie gazpacho.

Number of Servings: 9

Ingredients

    32 oz.RW Knudsen Very Veggie juice (spicy)
    1 medium cucumber
    1/2 large purple onion (more or less)
    1 Haas avocado
    2 cloves garlic, minced (optional)
    1 medium/small zucchini (or yellow squash)
    1 15 oz. can diced tomatoes (or 2 fresh tomatoes)
    1/2 tsp. oregano
    1 Tbs. olive oil
    3 Tbs. Red Wine Vinegar (or cider vinegar)
    2 Tbs. lime juice

Tips

Best if made a day ahead - or add ice cubes.
Garnish with sliced limes.
Add Cholula Hot Sauce for extra zip.


Directions

Chop cucumber, onion, and zucchini into small pieces and put in a large bowl.
Dice avocado & add to bowl with minced garlic and spices. Add all juices, stir gently, chill
