Ingredients

    1 cup chicken broth (boiled chicken bones)
    2 cups water
    1/4 cup shredded spinach
    1 cup broccolli florets
    I diced shallot (small)
    3 tbsp no salt added tomato sauce
    4 oz Goya Yello Rice (low sodium)

Directions

Pour chicken broth & water into saucepan. Add
shredded spinach, broccoli florets, shallots.

Bring to a boil and add goya dry rice mix. Boil vigorously
5 minutes then set to simmer.

Add tomato sauce and sliced baby bella mushrooms.
Simmer covered 25 minutes.

Serve warm immediately.

Serving Size: Makes four 4 oz servings
