Ingredients

    2 -5" long Delicata squash, cubed, with skin
    1/2 sayoy cabbage, coarsely chopped
    1/2 cup sliced red pepper
    1 med onion, coursely chopped.
    1 can Black soy beans, with liquid.
    1 cup vegetable broth
    3 tbsp crumpled gorgonzola
    Juice of 1/2 lemon.


Directions

Steam squash for 30 min. until skins are soft.
Place in glass oven caserole with other ingredients and cover with tin foil.
Bake at 335 degrees for an additional 30 min.

    Very Good
    I like this, even though the 30 minutes of baking was not quite enough to cook the other ingredients. Maybe it was my oven...but still, it is very tasty even though I didn't have quite enough gorgonzola. I'll bake it a bit more...it is pleasantly crunchy now. - 10/13/12
