Ingredients

    2 oz. Smoked Salmon
    1 wedge lemon juice
    1 teaspoon chopped onions
    1/2 teaspoon tiny capers or chopped large capers, rinsed with water
    1.5 teaspoons plain fat-free yogurt
    2 whole wheat pita bread 2" round (can cut with cookie cutter)

Directions

Cut the salmon across the grain of the fish to make 1/4" strips. Turn and cut again to end up with 1/4" pieces.

In a bowl mix the salmon with remaining ingredients, adjusting seansoning to taste. Use immediately or cover and refrigerate up to 2 hours before serving.

To serve, separate each pita into 2" round discs and toast lightly in a 400 degree oven.

Put salmon mix on pita and serve.
