Introduction

Ingredients

1/3 cup Roasted Red Peppers (jarred, in water)
1 cup canned green lentils (rinsed and drained)
1 tsp VE Minced Garlic
1 stalk of celery, chopped (including leaves)
1 tbsp fresh chives, chopped
1 tbsp fresh parsley, chopped
1/2 tsp fresh thyme, removed from stem
2 tbsp feta cheese, crumbled
3 tbsp extra virgin olive oil
3 tbsp lemon juice
1 tsp dried sweet basil
1/2 tsp cayenne pepper
Salt & Pepper, to taste
Tips
If using dried herbs, reduce chives and parsley to 1 tsp and thyme to 1/4 tsp.
Directions
Mix first 8 ingredients together in a bowl.
In a separate bowl whisk together olive oil, lemon juice and seasonings to make a dressing.
Pour dressing over lentil mixture and stir until well coated. Refrigerate 30 mins (or longer) before serving.
Serving Size: 2 servings of 3/4 cup each
