Ingredients

    1 tbsp of olive oil
    2-3 scallions
    3-4 cloves garlic
    1 sweet potato, baked or fresh
    1 cup crushed tomatoes
    2 cups vegetable broth
    2 tbsp of peanut butter
    salt, to taste
    chipotle powder, to taste
    liquid smoke, optional to taste

Directions

Saute scallions and garlic in olive oil. When they are soft add the sweet potato. I used a leftover baked potato but you can just dice a fresh one. Saute the potato with the scallions and garlic. Add the crushed tomatoes and thent he vegetable broth. Bring to a boil and then turn down to simmer. If you use a baked potato the simmer is only about 15-20 minutes. If using a raw potato, simmer until it is soft. Add peanut butter and then use an immersion blender to cream the soup. Add seasonings and enjoy.
