Ingredients

    2 cups of wild rice, cooked
    2 cups of pot barley, cooked
    2 cups of brown rice or wheat berries, cooked
    1/2 cup of dried cranberries or dried sour cherries
    1/2 cup of olive oil
    1/2 cup of cider vinegar
    1/4 cup of fresh parsley, chopped
    2 TBS of Worchestershire sauce or soya sauce
    2 scallions, chopped fine
    2-4 cloves of garlic, chopped fine
    1 medium carrot, chopped
    1 stalk of celery chopped
    1 medium apple, chopped fine

Tips

The grain ingredients cook more quickly if presoaked.


Directions

Cook, drain and cool the grain ingredients. Prepare other ingredients as specified and mix all ingredients together. Refrigerate and let flavors mingle for an hour or more before serving.
