Ingredients

    2 tbs unsalted butter
    3 tbs extra virgin olive oil
    1 cup small chopped onion
    2 cloves garlic minced
    2 dried bay leaves
    1/4 c. balsamic vinegar
    1/4 c. apple cider vinegar (raw)
    1-2 tbs hot pepper vinegar
    8 oz. cooked ham
    5 cups cleaned and cut collard greens
    4-5 cups organic chicken broth

Tips

add water to keep greens covered as needed, sparingly.


Directions

brown onions in butter and oil on medium heat, adding garlic during last minute of cooking. add broth and bay leaves and all vinegar. bring to boil, add greens and ham. turn down to simmer, cook for 2 hours.
