Ingredients

    * 3 eggplant3
    * Mozzarella Cheese, part skim milk, 3 oz
    * Red Ripe Tomatoes, 2 cup, chopped
    * Tomato Paste, .75 cup
    * *Spinach, cooked, 1.5 cup
    * Ricotta Cheese, part skim milk, 1 cup
    * *Pork Sausage, 6 link (raw dimensions: 4" long x 7/8

Directions

Slice eggplant into 1/4 circles. Grill on a dry saucepan or griddle (castiron is best) until brown. Flip to cook both sides.
Mix chopped tomatoes with tomato paste and water to thin. Add spinach.
Remove the skins of the sausage and saute. Drain the fat. Add onions, garlic or pepper to the saute if desired. Mix with the ricotta
In a baking pan, layer sauce, eggplant, sausage mixture. Top with sauce and cover with mozzarella. Bake until hot and cheese is bubbling.
