Ingredients

    2 nice snapper fillets
    juice from 1 lemon
    1 tsp old bay garlic and herb seasoning
    1 red pepper cut into strips
    1 green bell pepper cut into strips
    1 medium onion sliced
    3 cloves of garlic minced
    1/4 cup sundried tomatoes julianned
    1 tbsp olive oil
    1/4 teaspoon sea salt

Directions

Place snapper fillets in dish and squeeze fresh lemon juice over them. Sprinkle the old bay seasoning on the snapper and set aside. Clean and chop peppers, onion and sundried tomatoes. In large skillet heat oil on med heat. Add vegetables and cook until softened and slightly browned. Add garlic and sea salt. Saute for one minute more. Place seasoned side of snapper down in skillet next to vegetables. cook for 5-7 mins till browned on that side. Turn snapper over and spoon vegetable mixure over fillets. Cook for another 2 mins. Can be served on a bed of cous cous or with a light rice pillaf. Makes 2 serving.

    Incredible!
    I'm not a big fish eater, but my husband loves it and I'm trying to incorporate it more into my meals. This recipe was easy to make, it looked beautiful on the plate, and it tasted great. According to my husband, it was "incredible!" - 4/23/10
