Introduction

This is a low-fat, low-calorie, low-carb (but very flavorful) tuna salad; it's a great protein-packed snack you can eat in lettuce wraps or with your favorite crackers. Ingredients

    11 oz (about 2 cans) Chunk albacore tuna in water (no salt added)
    1 large hard-boiled egg, finely chopped
    1/2 c. roma tomato, finely chopped
    1 c. baby kale, finely chopped
    3 tsp. honey mustard
    1 T sweet relish
    1 tsp lemon juice
    1 tsp each garlic powder, dill, thyme
    .5 tsp ground turmeric

Tips

Most tuna salad utilizes mayo, which I omitted in order to keep the fat content low. Adding chopped tomato, mustard, lemon juice and relish helps keep the tuna moist.


Directions

Drain the tuna and combine all ingredients in a bowl. Serve with chips, crackers, in lettuce wraps or in a sandwich :-)
