Introduction

My husband likes this better than traditional pizza. I make 2 pizzas at once and freeze one for later. The crust can also be used for garlic fingers. Just brush or spray crust with olive oil cooking spray and throw on some minced garlic cloves and mozzarella before baking. Yum! My husband likes this better than traditional pizza. Ingredients

    Crust:

    1/2 tsp. honey
    1 cup warm water
    1 pkg. active dry yeast
    2 3/4 cups all-purpose flour
    1/2 tsp. salt
    1 tbsp. olive oil

    Pizza Topping:

    1 1/2 cups shredded part-skim mozzarella cheese
    1 medium onion, sliced
    4 tbsps. chopped fresh basil (or 2 tsps. dried basil)
    1 tsp. dried oregano
    2 large tomatoes, thinly sliced
    3 tbsps. grated Parmesan cheese
    Dash pepper

Directions

Crust:

Stir honey into water in small bowl. Sprinkle yeast over water and stir until yeast dissolves. Let mixture stand about 5 minutes or until yeast starts to bubble.
Mix flour with salt and oil and pour in yeast mixture. Knead slightly, until smooth. Add flour by tbsp until dough reaches desired consistency. Let rise until doubled, about 45 to 60 minutes.


Divide dough in half and pat out onto pizza pans slightly oiled with cooking spray. Sprinkle with mozzarella cheese, onion slices, and half the basil and oregano. Arrange tomato slices on top; sprinkle with grated Parmesan cheese, remaining basil and oregano, and pepper to taste. Bake in 400 degree F. oven for 15 to 20 minutes, or until bubbly. Makes 2 pizzas. 8 servings

    Nice to find a delicious, affordable & EASY homemade recipe that rivals "those guys." My picky kids loved their personal-sized pizza. We made four smaller pizzas, and still had leftovers for lunch tomorrow. I reduced the temp to 375*/15 min. "Mom, when can we make this again?" ... Yay! - 6/23/08
