    3 cup, cubes Butternut Squash
    1 cup, chopped Onions, raw
    5 clove Garlic
    1.5 cup Ancient Harvest Quinoa Inca Red, 1/4 cup dry, 3/4 cup cooked
    2 cup Baby Spinach (raw)
    0.5 cup Cranberries, dried, sweetened (craisins)
    0.5 cup Nuts, Pistachios, Kirkland dry roasted,1ser=1/4 cup w/o shells

Tips

Cook Quinoa with orange zest and chicken broth or vegetable broth for added flavor


Directions

Roast squash with garlic cloves and onion at 425 for 25 minutes
Chop spinach
Toss all ingredients
