Ingredients

2.25 cup uncle bens original converted long grain white rice
1 cup Rooster Brand Coconut Milk
1 serving Green Onion (fresh-1 stalk)
3 tsp Thyme, fresh
1 cup Beans, pinto
10 gram(s) Scotch Bonnet Pepper per 45g (approx 1 pepper) (by C25KGAL)
.75 tsp Salt
.25 tsp Pepper, black
.25 tsp Allspice
Directions
Wash the rice thoroughly.
Place rice into the rice cooker then add all other ingredients and stir. Top with water according to rice cooker instructions (go to the 4-cup line for this recipe) and set it to cook.
Halfway through the cooking process, stir again to ensure the beans are not all sunk to the bottom.
NOTE: Due to the natural sugars from the rice and coconut milk, do not let the cooker sit in the keep warm cycle when the cooking is done. If not, it can start to cake at the bottom of the cooker.
When cooking is done, turn the cooker off. Let the rice sit for 10 minutes, then fluff with fork and serve!
