Introduction

Number of Servings: 4

Ingredients

    1 tomato, chopped
    1 cucumber, seeded & chopped (English pref)
    1/4 cup thinly sliced red onion
    1/4 cup canned kidney beans, rinsed
    1.2 cup firm tofu, diced
    2 tbsp chopped fresh basil
    2 tbsp balsamic vinegar*
    4 tbsp olive oil*
    sea salt to taste
    pepper to taste

    *Can substitute 1/4 cup balsamic dressing

Directions

In a large bowl, combine tomato, cucmber, onion, beans, tofu and basil and toss. Add salt and pepper to taste.

In a small bowl, combine oil and vinegar.

Toss with dressing just before serving.
