Introduction

Ingredients

    ½ cut light mayonnaise
    ½ cup reduced fat sour cream
    3 tablespoons balsamic or white wine vinegar
    ¼ cup canola oil
    ½ teaspoon salt
    ¼ cayenne pepper
    1 medium head of cabbage coarsely shredded
    ¼-½ cup shredded carrot
    ¼-½ cup finely chopped onion (I use Vidalia when I can get it)
    ¼ cup finely chopped fresh parsley
    3/4 cup reduced fat crumbled blue cheese
    Freshly ground black pepper to taste

Directions

Mix together mayonnaise, sour cream, vinegar, oil, salt and cayenne pepper. In another bowl mix together chopped cabbage, carrot, onion and parsley. Pour dressing over cabbage and mix touroughly. Stir in blue cheese and black pepper to taste.

Cover and chill until ready to serve. The onion taste will become more pronounced the longer it sits so be aware !!
