Introduction

Ingredients

4 Potatoes
1 Green Bell Pepper
1 Small Onion
2 Tbsp. Olive Oil
1 Tbsp. Garlic Pepper (can use equal amounts of garlic powder and black pepper if you don't have garlic pepper)
Directions
Wash and dice potatoes into 1 inch cubes.
Clean seeds out of pepper, wash and dice.
Peel outer layer off onion and dice.
Combine all ingredients on a sheet of aluminum foil.
Drizzle olive oil on top of vegetables and sprinkle with seasoning.
Fold sides and ends of aluminum foil around vegetables. Add another layer of aluminum foil around the vegetables.
Cook on a preheated grill for 25 minutes or until potatoes are tender. Can be made and placed in oven safe dish, covered and baked at 350 degrees for 30 minutes or until potatoes are tender.
Serve. Makes 4 1 - 1 1/2 cup servings (depends on size of potatoes)
