Number of Servings: 10
Ingredients

Veg Oil - 3 tbl spoons
Flour - 3 Tbl spoons
Chicken legs - 10
Smoked sauage - 28 oz.(Healthy Chioce Low Fat)
scallions (green onion) - 10 stalks
onion - 1 lg chopped
peper - lots of pepper to taste
Salt - to taste.
rice - 10 cups cooked
File' - to taste.
Directions
Boil fat / oil out of sausage and set to the side.
Make Roux- This sounds hard but it's not.
add the 3 tbl spoons of oil and heat it. Once heated add the flour. Continuely stir flour until brown as hersey chocolate. It will smell like burn popcorn. (But the end result is worth it)
Add about 32 oz of water. The flour will look goopy. This is fine.
Add all other ingredients (except rice)
Let simmer for about 20-30 mins
Serve over rice
Add file & salt to taste.(not included in nutritional information)

I am going to try this, but will substitute black pepper for "red pepper flakes" or 2T of Tabasco sauce and add some minced garlic to the recipe. I think this is a good pared down "Cajun" gumbo recipe. - 7/27/08

I didn't think to add the tabasco sauce to the receipe cause my hubby is a spice wimp. What can I say he's not from N.O.LA. I always add it after cooking. Found it very difficult to write this cause mom taught me to add a little of this & that. I don't think she owned a measuring cup!
