Introduction

This is terrific as is but can also be served on a bed of lettuce for a nice salad or with rice or pasta. You can use canned corn, but sweet corn, at the height of the season, makes this salad something special. Ingredients

    2 cups fresh corn kernals (2 to 4 ears)
    1 tsp freshly minced garlic
    1/4 cup white wine
    1/2 cup canned black beans, drained & rinsed
    1/2 cup cooked boneless/skinless chicken breast, diced
    1/2 cup finely diced red onion

    LIME-CILANTRO DRESSING:
    2 Tbsp rice wine vinegar
    2 tsp lime juice
    2 Tbsp fresh, chopped cilantro
    1 Tbsp fresh, chopped parsley
    1/8 tsp cayenne pepper
    1/4 tsp freshly ground black pepper
    1/2 tsp salt (optional if watching sodium)

Directions

Braise the corn with the garlic in the white wine for about 5 minutes. When the corn is cooked, toss with the beans, chicken and onion. Mix the dressing and toss with the corn mixture.
Serve at room temperature.
