Ingredients

    Mackerel (fish), 2 fillet
    Onions, raw, 1 medium (2-1/2" dia)
    Scallions, raw, 3 medium (4-1/8" long)
    Tomato products, Hunts Diced Tomatoes w/ asil, Garlic, and Oregano, 0.5 serving
    Tomato Sauce, 0.5 cup
    Extra Virgin Olive Oil, 1 tbsp
    Green Peppers (bell peppers), 0.3 cup, chopped
    Water, 0.5

Directions

In a Large Pot, Boil Mackerel fillets for about 35 Minutes on medium heat. Remove from Stove, pour off water. Set aside to cool. In a large Skillet sauté onions, scallions, green bell peppers, diced tomatoes and extra virgin olive oil on medium low heat for 5 - 10 minutes. Add tomato sauce and water to the skillet and mix in. Take the Mackerel fillet and strip them into small or medium pieces and place into Skillet. Mix in Mackerel so its blends in with sautéed mixture.
Cover and cook for 10-15minutes on Low heat.
