Ingredients

    Filling
    Better 'n' Eggs egg substitute, 2 cup
    Milk, 1%, .5 cup
    Butternut Squash, 1 cup, cubes
    Goat Cheese, Soft, 3 oz
    Rosemary, dried, 1 tbsp
    Salt, 1 tsp
    Pepper, black, 1 tsp

    Crust
    Yellow Cornmeal, 1 cup
    Earth Balance Natural Buttery Spread, 2 Tbsp
    Agave nectar, 1 tsp (or honey)
    Ice water, 4 TB

Directions

Prepare crust. Mix melted butter with cornmeal, add agave nectar, then gradually add in ice water (without the ice!) till mixed well. Press into a 9" pie tin coated with non-stick spray and bake at 375 for 10 min. Remove from oven.

Mix the filling ingredients together with a whisk, then pour into crust. Bake at 375 for 50 min. Serve warm.

    This is delicious! I didn't have any rosmary so substituted with spike. Next time I make it I will get the rosemary- spike was good but I think the delicate flavor of rosemary will compliment it more. My son loved it and ate three pieces in a row-it was gone by the next morning. - 11/23/10
