Ingredients

    1 can of Chicken Broth
    1/2 head of Cabbage - chopped
    3 large carrots - chopped
    8 stalks of celery
    1 onion chopped
    1 cup of green peppers chopped (approx 2 large)
    1 can chopped tomatoes
    1 can of sliced mushrooms
    1 pkg of lipton onion soup mix
    12 oz can of v-8 juice
    .

Directions

Chop all veggies into bite size pieces. Drain and rinse canned mushrooms. Add all ingredients in a large crock pot - cook on high for two hours and then on low for 3 hours. Very filling. Makes 10 servings of 1 cups. very low calorie.

    I made this soup for my husband and I for the day after our birthdays dinner. Love it. The only thing i did differently is omitted the mushrooms blah....and used a can of tomatoes with green chilies instead of just plan tomatoes. Thanks it was fantastic. Keeping this recipe. - 2/19/09

    WE LOVE THIS SOUP!!! Changes we made: Omitted mushrooms and peppers (allergic). Used 4 cups reduced sodium chicken broth, a WHOLE head of cabbage, a large can (32 oz.) diced tomatoes, and added a tsp of Worcestershire sauce and some ground black pepper at the end. Guilt free yumminess! - 11/9/08

    Not bad, great way to get in a lot of veggies. I had to add some garlic powder and some fresh thyme to bump the flavor up a bit. I also used fresh mushrooms as I'm not fond of the canned type. One caveat, I did make this stovetop and not slow-cooked, so it may have contributed to lack of flavor. - 3/15/09

    Really good!! I added 2 extra cups of low-sodium chicken broth instead of the onion soup mix and the broth was soo rich in flavour. It's loaded with veggies and is super filling. My kids even liked it! - 11/2/08
