Introduction

Number of Servings: 4

Ingredients

    1 can chickpeas, drained and rinsed
    3 roma tomates, seeded and diced
    1/2 small red onion, diced
    1 bunch fresh cilantro, chopped
    1 tbsp extra virgin olive oil
    3 tbsp red wine vinegar
    1/2 tsp cumin
    1/2 tsp cayenne pepper
    1/2 tsp salt
    1/2 tsp black pepper

Directions

In a large bowl, combine the first 4 ingredients. In another smaller bowl, whisk together the oil, vinegar, cumin, cayenne, salt and pepper. Pour over chickpea mixture and toss well. Serve immediately or refrigerate overnight. Makes 4 servings. Great as a side dish!

    Very Good
    Very refreshing - I added apple cider vinegar instead of the red wine and really liked the flavor. Great recipe - 9/29/08
