Ingredients

    1200 grams potatoes-- about 3 pounds, pelled and chunked
    1 large chopped carrot
    2 medium chopped onions
    1 large chopped celery stalk
    1 quart chicken or veggie broth
    salt, pepper to taste,
    6 wedges Laughing Cow Light
    4 cups nonfat milk
    4 tablespoons flour

Directions

Makes 8 servings

Pam the bottom of a big soup pot and sweat the onions, carrots, celery. Add potato chunks, salt, pepper, stock, cook for 30 minutes. Mix the milk and flour, mix into soup to thicken, add Laughing Cow Light wedges, cook a bit more. Use the immersion blender to puree. Be careful with hot soup if you use the regualr blender.

Add chopped onion, cheese, bacon bits to top if you like but count the calories.
