Introduction

Sweet n' sour deep fried tofu, w/ chik'n & veggies Sweet n' sour deep fried tofu, w/ chik'n & veggies
Number of Servings: 4

Ingredients

    1 Package of Deep Fried Tofu (9 Cubes), cut into 4 pieces each
    1/3 Package of Veggie Chik'n Strips, diced
    2 Onions, diced
    2 Bell Peppers, diced


    3/4C Frozen Peas & Carrots
    1 Tomato, diced
    2/3C Pineapple Tidbits

    1/2C Pineapple Juice
    1/2C Low Carb Ketchup
    1tsp Soy Sauce


Directions

1. Add First 4 ingredients to a non stick frying pan, spray with non-stick spray. Cook on Medium-High heat until golden brown (about ten minutes)

2. Add pineapple tidbits & tomato. Cook for another five minutes. In the meantime, mix the pineapple juice, ketchup, and soy sauce, set aside.

4. Add the sauce to the pan, along with the frozen peas and carrots. Lower heat to Medium, and simmer for another five minutes until the sauce thickens slightly and the peas & carrots are heated through.

5. SERVE & ENJOY :D


Variations:
*Use plain diced tofu in place of the deep fried tofu
*Use twice as much chik'n strips & omit the tofu
*Serve on a bed of brown rice

    This sounds absolutely delicious! I'm definitely going to try this tonight. I did make this with a little variation. Not much though. It was even better than I expected. I could've eaten more. Not because I was hungry, because it was GREAT!!!! - 7/30/09

    I can't wait to cook this! although i've never even seen Deep Fried Tofu in shops before, hopefully it will taste just as great as it sounds with Silken Tofu! - 11/7/08

    this was so good!!! i used just plain tofu and left out the veggie chicken strips but it turned out great. will be making this often. thanks for the great recipe - 11/7/08
