Introduction
This is a great vegetarian alternative or addition to regular stuffing for the holidays. You could replace the eggs for egg beaters to cut down on cholesterol. And just about any kind of bread works. And you could save a few more calories but cutting back on the butter or using a butter alternative. This is a great vegetarian alternative or addition to regular stuffing for the holidays. Ingredients

20 oz can Pineapple crushed (undrained)
4 large eggs
6 slices of reduced calorie wheat bread
1/2 stick butter
1 T. Brown sugar
Directions
1. Preheat oven to 350 degrees.
2. Spray a 9x9 inch oven safe dish with cooking spray.
3. Melt butter in 9x9 inch oven safe dish.
4. Add sugar to butter
5. Beat eggs and add to sugar & butter, mixing well.
6. Add pineapple (do not drain) and mix.
7. Cut bread into cubes and add to the rest of the ingredients. Mix ingredients until bread is well-coated.
8. Cover with tin foil, and bake at 350 degrees for 30 minutes.
9. Mix stuffing, recover, and return to oven for 20 minutes.
10. Remove cover, and bake for another 10 minutes or until stuffing is browned.
Stuffing is cooked when the bread has obsorbed all of the juices (so it is not runny anymore).
